Easy Breakfast Recipes #1 Classic French Toast:
This is that perfect quick fix for our Sunday morning breakfast in bed. More so because the nanny makes if better than I do! I don’t support breads usually, but we need a little bit of everything don’t we!
With a dash of vanilla essence and cinnamon in the whipped batter of eggs with a tea spoon of milk, we love our French Toast with an organic honey glaze. It’s quick and requires practically no preparation in advance. It is a classic easy breakfast recipe.
Easy Breakfast Recipes #2 Whole Wheat Pancakes
This is a more interesting twist on the traditional poodla or chilla. I’ve always made my pancakes with whole wheat flour made from a batter with buttermilk. But it’s only recently that I discovered that adding a little baking powder and egg changes the consistency to a much more fluffy and soft version. Add to it some jaggery and salt and it’s a nice sweet and savory easy breakfast recipe.
Easy Breakfast Recipes #3 Fruit Smoothie Bowl
Mangoes or strawberries, there’s always a seasonal fruit to go with this easy breakfast recipe. Our current favourite is strawberry smoothie. I usually blend a slightly hung curd with my favourite strawberries and a banana. To garnish this, I add some chopped dry fruits and the kids eat it with no fuss. Choosing a seasonal fruit always helps with the flavor.
Easy Breakfast Recipes #4 Potato Rossetti
This is often used but is not restricted to a easy breakfast recipe. I really don’t know how the rest of the world makes this, but this is how I know my kids and husband eat it! I simply grate potatoes in a big bowl, add salt and some pepper in it. Then I add these in small 3-4 inches flat rounds and flip them to cook evenly till they turn a nice crispy golden. My older one if not too fond of this, but he manages!
Easy Breakfast Recipes #5 Rava Idli
I have the cutest coin sized idli moulds. With a little bit of pre-soaked semolina, curd and water, this instant idli mix makes delicious and quick breakfast escapes. If I have the time, I grate some carrots into the batter before I put these to steam.
Easy Breakfast Recipes #6 Vegetable Vermicelli
This is an easy breakfast recipe and you can never go wrong with. Contrary to the typical Indian version, I make mine with steamed vegetables (carrots, beans, peas) and chopped spinach lightly roasted in ghee along with the vermicelli, salt, pepper and topped with grated cheese. For the younger kids, these can be grated too!
Easy Breakfast Recipes #7 Assorted Fritters
Fritters are something that’s easy to make and even the little ones can eat them independently. I make mine with sweet potatoes, spinach, potato, carrots or chicken. Mixed with just a little bit of all purpose flour, eggs and cheese, I find these also make great dinner options.
Easy Breakfast Recipes #8 Omlette
Quick or not, eggs are an all time favourite breakfast in the house. My husband makes the best omelets and has always found the yummiest stuffing for them. Spinach, cheese, tomatoes, ham, chicken and so much more. This is actually where my kids learnt to eat mushrooms from!
0 Easy Breakfast Recipes #9 Crepes
The typical batter consists of whole wheat flour, egg, vanilla essence and milk cooked really thin on a pan creased with butter/oil. I freeze these somethings (though I prefer things fresh). When it’s time to whip up a quick breakfast, I take these out, warm them on the pan. Sometimes I fill these up with scrambled eggs, sometimes left over veggies from the previous evening, maybe just a stir fry vegetable, baked beans or sometimes just cheese and jam! If not a quick breakfast, this also helps in fixing a quick snack.
Easy Breakfast Recipes #10 Theplas
Blame it on my Gujju origin. The quintessential Gujarati snack, I usually have these at any given point in time in my kitchen.The kids eat these with several accompaniments such as curd, butter, cheese spread and their favourite is melted chocolate spread atop. They sometimes add jam and roll them up for breakfast or perhaps even some nutella. Given that these always have vegetables such as methi, doodhi , palak or carrots, I’ve made peace with that little spoonful of indulgence that I allow the kids to have.

saving this as my boy has started school and earlier it was not an issue but now he doesnt eat the same breakfast twice in a week so i need more ideas to make it interesting and loved all your breakfast ideas going to try soon

This is a great list. I had completely forgotten about potato rosti and french toast. It used to be a regular Sunday brunch for us at home pre-baby. But off late these had been put on the back burner. Now that T is older he will enjoy having these too. It may even make great school lunches.
